Buying meat in bulk saves money and it’s the most affordable way to buy our delicious pasture raised, grass-fed, and grain/chocolate finished Wagyu beef. Sold by the quarter, each quarter containing the same cuts, we harvest and process our animals when they reach adequate size and approximate weights to provide the customer with around 150 lbs (per quarter) of aged (7 to 10 days), bone-in, vacuum sealed, and frozen packages of Hartland Farm Wagyu.
The price of the quarter is based upon the hanging weight of the hot carcass which includes bones, meat, and fat but does not include internal organs, hide, and other non-edibles. The cost per pound of hanging weight is currently $7.60/pound making the cost per quarter, before processing, in the $1600 to $1800 range.
A $750 deposit is required to reserve a quarter of unprocessed beef. The deposit is fully refundable up to 1 week prior to harvest with the balance due at the time of harvest.
After your live, fractional/quarter animal purchase, we arrange the harvest and transportation to a local custom butcher for processing.
Processing costs are additional, cash-only, and payable to the pro-cessor. Our beef is processed by S & J Processsor. Currently, the processing cost is $.80/pound hanging weight or approximately $180/quarter. However, they will let you know the exact costs when they notify you that your order is ready for pick-up.

Shipping is not currently an option — you will have to pick up your order from the processor in Kentucky and provide your own containers for the packaged beef. A processed and packaged quarter cow will usually require a 5 to 7 cu ft freezer.
